OLIVE AND MACKEREL PASTA

A delicious pasta recipe with a savoury twist! The black olives really give this dish an earthy flavour, and combined with an oily fish makes for a truly delicious meal. High in protein and omega-3 fats, this recipe is perfect for busy dancers, supporting muscle recovery, bone health (protein is important for muscles too!) and immunity.

Serves 2

Per serving: 620kcal, 16g fat, 28g protein

Ingredients

½ tin of black pitted olives (in brine),

2 tbsp. olive oil,

2 garlic cloves (finely chopped),

1 small tin of mackerel or sardines (approx. 115g),

1 x tin plum tomatoes,

240g pasta,

salt and black pepper to taste.

Method

  1. Throw the olives in a blender and process until smooth (or chop finely).

  2. Heat the oil in a pan, then add the garlic. Fry on low for a minute (until beginning to brown) then add the olives and tomatoes.

  3. Simmer on low, breaking up the tomatoes with a wooden spoon.

  4. Meanwhile, pour boiling water carefully into a pan, add a little salt then throw in the pasta. Cook as per packet instructions then drain.

  5. Take the sauce off the heat, flake in the mackerel then mix into the sauce. Add salt and pepper to taste.

  6. Serve the pasta and top with the sauce.
