Recipes with Zerlina Mastin

When it comes to planning meals for the week, it is often hard to buy just the right amount of ingredients, particularly when foodstuffs come pre-packaged. Perhaps we brought just a few too many potatoes, or forgot that we still had some celery in the back of our fridge!


So February’s recipes are all about making use of leftovers. There is no need to throw away ingredients we think we have no use for. With a little know-how, we can use leftovers to our advantage, turning them into something surprisingly delicious and inventive! So here are just a few ideas… each recipe contains a good source of carbohydrate, protein, healthy fats and micro nutrients to support the demands of dance.

 

Breakfast - Banana Oat Pancake


Are those bananas sitting in your fruit bowl beginning to look a little overripe?! They may be too soft to place in your bag, but they make ideal ingredients for pancakes! The following recipe uses oats instead of flour, and can be served with fresh fruit and a little honey. Easy to prepare, these pancakes take just a few minutes to make.


Serves 2


Ingredients:

2 ripe bananas, 2 eggs, ½ cup oats, 1 tsp. vanilla extract, 1 tsp. cinnamon.


Method:

  • Mash the bananas in a large bowl until smooth. Mix in the eggs and vanilla until fully combined, and then add the oats and cinnamon.

  • In a non-stick pan, add a small cup* of the pancake batter and spread to form an even layer. Heat for approximately 2-3 minutes (you should start to see small bubbles form on the top of the batter). Flip and cook on the other side until golden brown (1-2 minutes).

  • Optional toppings: honey, fresh fruit, natural yoghurt, chopped nuts etc.


*To make 4 thick pancakes, use ½ cup of batter for each pancake.
