A very colourful and flavourful lunch that is quick and easy to prepare! This recipe not only contains a good source of protein and healthy fats, these wraps also provide a good dose of iron. Bell peppers contain vitamin C which optimizes iron absorption. A great combo for optimizing energy and stamina!
SPINACH, HUMMUS AND
BELL PEPPER WRAPS
2 large wholegrain tortilla wraps, ½ cup hummus, 1 red bell pepper, 1 cup of spinach, ¼ cup of feta cheese
Spread each tortilla wrap with ¼ cup of hummus, leaving approximately ½ inch border around the edge.
Chop the bell pepper and divide evenly between the wraps.
Down the centre of the wrap, add the pepper, spinach and feta cheese
Fold the top and bottom edges of the wrap over, rotate the tortilla and roll up from the bottom.
Cut each wrap in half and serve!
Additions include tomato salsa or red onion.
Note: Tea and coffee contain tannins, which reduce the amount of iron absorbed from food. Avoid drinking tea or coffee with a meal (wait half an hour or so).
